Pour des grillades plus saines, il y a toutefois des solutions.<\/h2>\n\n\n\n<p>Depuis plusieurs ann\u00e9es lorsque les beaux jours arrivent il y a une question qui revient sans cesse dans la bouche de mes clients \u2026durant mes consultations \u2026 <a href=\"https:\/\/www.emmanuelastier.com\/index.php\/2022\/01\/04\/alimentation-saine-cle-de-votre-immunite\/\" target=\"_blank\" rel=\"noreferrer noopener\">\u00ab\u00a0Alors, je vais devoir supprimer les barbecues\u00a0??\u00a0\u00bb<\/a><\/p>\n\n\n\n<p>Cette question timidement exprim\u00e9e du bout des l\u00e8vres , de mani\u00e8re presque comme si une condamnation \u00e0 une terrible sentence tombait fait \u00ab\u00a0le buzz\u00a0\u00bb de nouveau en ce moment \u2026<\/p>\n\n\n\n<p>Historiquement r\u00e9alis\u00e9es sur un barbecue aux \u00c9tats-Unis ou sur une plaque dans les pays du sud, les grillades ont plut\u00f4t r\u00e9cemment \u00e9t\u00e9 d\u00e9cri\u00e9es. Bon nombre d\u2019\u00e9tudes ont d\u00e9nonc\u00e9 la formation d\u2019hydrocarbures aromatiques, polycycliques (HAP) et de d\u00e9riv\u00e9s pyrolytiques des acides amin\u00e9s dus \u00e0 <a href=\"https:\/\/www.emmanuelastier.com\/index.php\/2022\/05\/10\/bien-manger-pour-un-ete-encore-plus-savoureux\/\" target=\"_blank\" rel=\"noreferrer noopener\">l\u2019exposition des aliments \u00e0 une forte chaleur (220\u202f\u00b0C)<\/a>. Form\u00e9s d\u2019atomes de carbone et d\u2019hydrog\u00e8ne, ces r\u00e9sidus noirs expriment une toxicit\u00e9 et sont aujourd\u2019hui consid\u00e9r\u00e9s comme canc\u00e9rig\u00e8nes. Une derni\u00e8re \u00e9tude effectu\u00e9e sur un panel d\u2019Am\u00e9ricaines vient d\u2019ailleurs de confirmer que les viandes rouges grill\u00e9es au barbecue augmentaient le risque de cancer du c\u00f4lon.<\/p>\n\n\n\n<p><em>\u00ab N\u00e9anmoins l\u2019ensemble des donn\u00e9es scientifiques actuellement disponibles montre que le risque de surexposition alimentaire \u00e0 ces compos\u00e9s par l\u2019utilisation de barbecue est limit\u00e9 si l\u2019on respecte les principes d\u2019utilisation des appareils, ainsi que certaines recommandations de cuisson \u00bb,<\/em> pr\u00e9cise les autorit\u00e9s sanitaires am\u00e9ricaines. Du moins si on ne cuisine pas de cette mani\u00e8re tous les jours. Ce qui est dans la majorit\u00e9 de la population, le cas en France.<\/p>\n\n\n\n<p>Parce qu\u2019ils sont riches en <a href=\"https:\/\/www.plantes-et-sante.fr\/articles\/aliments-sains\/1301-les-antioxydants-un-gage-de-longevite\">antioxydants<\/a>, accompagner les viandes grill\u00e9es d\u2019une large quantit\u00e9 de l\u00e9gumes crus ou de fruits, permet en plus de compenser les effets de cette cuisson. Plus aqueux et pauvres en mati\u00e8res grasses, les v\u00e9g\u00e9taux ne sont pas expos\u00e9s \u00e0 ces substances toxiques, et permettent de \u00ab&nbsp;compenser&nbsp;\u00bb l\u2019ingestion de ces toxines. Les v\u00e9g\u00e9tariens ne sont pas exclus de cette probl\u00e9matique quant ils utilisent eux aussi autant le barbecue que les non v\u00e9g\u00e9tariens !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cuisson : mode d\u2019emploi<\/h3>\n\n\n\n<p>On sait aussi que ces mol\u00e9cules issues de la cuisson sont plus fortement produites par les barbecues qui fonctionnent au charbon de bois que par les mod\u00e8les \u00e9lectriques ou au gaz.
